Ampalaya with Alamang Recipe

It’s a healthy dish made of only two main ingredients plus onions, garlic, and seasoning. Ampalaya or “Bitter Gourd” belongs to the Cucurbitaceae family and is a tropical and subtropical vine.

Ingredients

  • 2 medium-sized Ampalaya
  • 2 eggs, beaten
  • salt
  • pepper
  • cooking oil
  • 3 cloves garlic, minced
  • 1 medium-sized onion, chopped
  • 1 medium-sized tomato, chopped

Instructions

  1. Clean the Ampalaya and slice in half lengthwise, remove the seeds and innards
  2. Soak the ampalaya in 2 cups of water with 1 tbsp salt for 5 to 15 minutes.
  3. Rinse the Ampalaya until dry.
  4. In a Pan, heat the oil and sauté the garlic, onion, and tomatoes.
  5. Add the ampalaya and cook for about 5 minutes or until it is tender.
  6. Add the beaten eggs, and cook until it firms up. Season with salt and pepper to taste.
  7. Try not to overcook the ampalaya so that it can still retain a little of its crunchiness.
  8. Remove from the Pan.
  9. Best Serve with Rice.
