Adobo in Spanish word “adobar” means to marinade, sauce or seasoning before cooking.  It is a Filipino national dish of Pork or Chicken and Beef stewed in vinegar.  The delicious flavor and preserving qualities of “Adobo” makes the dish more popular not only in the Philippines but also around the world.

Ingredients

  • 500 grams beef, cut into thin slices
  • 1/2 cup soy sauce
  • 1/3 cup vinegar
  • 3 cloves garlic, chopped
  • 1 teaspoon peppercorns
  • 3 pieces bay leaves(Laurel)
  • 2 tablespoons brown sugar
  • 1/2 cup water
  • salt to taste

Instructions

  1. In a pot, combine beef, garlic, bay leaves, peppercorns brown sugar, and soy sauce.
  2. Marinate for an hour or overnight in the fridge.
  3. Pour water then simmer on a low heat for 40 minutes or until beef is tender.
  4. Pour vinegar and simmer for another 5 minutes then season with salt and sugar according to taste.
  5. Cook until the sauce is almost absorbed and start to render oil.
  6. Transfer to a serving plate then serves with rice.
